Our story
One syrup, three ways
In the spring thaw, the maples of Québec run sweet, and Érable taps them the old way — buckets on the trees, a wood-fired evaporator, nothing else added. From that pure syrup we make three infused lines: bourbon-barrel, aged in retired barrels until it carries their oaky warmth; vanilla, steeped with real vanilla for a soft, round finish; and smoked chilli, warmed with a gentle smoked heat. Each is pure maple syrup first, an infusion second — a condiment for pancakes, glazes, cocktails and cheeses.
